Emulsion types

Emulsion types- There are two basic types of emulsions

1)Oil in water (O/W) In this type water is dispersion medium and oil is dispersed phase. An example is milk. In milk fat globules( dispersed phase) are suspended in water(dispersion medium). Cream is also an example of this type.

2)Water in oil (W/O) In this type oil is dispersion medium and water is dispersed phase. An example is Butter. In butter, water is dispersed phase. Margarine is another example of this type

  • solidified butter is a type of gel.
  • Other gel examples are cheese, gelly, etc.
  • whipped cream is foam
